Anchovie Stock

Makes about 2 1/2 cups

  • 7 Handsome anchovies
  • 4x5" square dried kelp
  • 3 green onion roots
  • 2ish inch cube of daikon, sliced thinly
  • 4 cups water

Remove the heads and guts from the anchovies.

Place ingredients in the pan, add cold water and bring to a boild. Reduce to simmer, and simmer 20-30 minutes. Strain and use.
