Bacon Wrapped Filet Mignon with Bleu Cheese
- 4, 6oz filet mignon, bigger if you like
- 1/2 lb bacon, thick cut is best
- 4-6 oz of stilton, gorgonzola, or standard maytag bleu cheese
- 1 Tbsp oil, for searing
- 1 tsp garlic powder
- 1 tsp onion powder
- salt and pepper
First, admire the beauty of these wonderful cuts of meat. Second, wrap each filet with 2-3 strips of bacon and secure with toothpicks or string. Season the steaks with salt, pepper, onion and garlic powder. In a hot pan, add oil and roll the bacon sides of the filets in the pan until the bacon is slightly crispy. Remove from pan and transfer to a pre-heated BBQ. Grill the steaks for about 6-8 minutes on each side. Filet mignon is such a lean cut of meat, it is best not to cook above medium. Remove from heat and top with bleu cheese and allow to rest for 3-5 minutes. Serve with mashed potatoes and fresh green beans.
