Beef Fajitas
- 1 lb flank steak
- 2 sweet red peppers
- 2 pablano peppers
- 3 white onions
- 1/2 cup soy sauce
- 1/2 cup lemon juice
- 1 avocado
- 2 limes
- 2 large tomatoes
- 2 bunches of cilantro, chopped
- fresh corn tortillas
Mix soy sauce and lemon juice together with one bunch of chopped cilantro, reserve 1/4 cup of mixture for vegetables. Trip any fat or gristle off the flank steak and discard. Add steak to the lemon, soy mixture and marinate for at least 30 minutes, but not more than 1 1/2 hours. The lemon juice will start to cook the meat, making it tough otherwise.
While the steak is marinating, slice onions, avocados, and peppers in 1/8 inch strips and dice the tomatoes. Place onions and peppers in a foil pouch with 1/4 cup of the reserved marinade and grill for 10-15 minutes. Grill the steak for 8-10 minutes, but do not over-cook. Medium is about as done as you will want to go so the meat stays tender. Remove from heat and allow to rest for a few minutes. After the meat has rested, slice against the grain in 1/8 inch strips. Warm the tortillas in the oven or on the grill and serve everything family style in nice bowls so everyone can build their own just they way they like. Serve with sides of rice and beans to bulk up the servings.
