Coffee Cake

  • 1 1/2 cup flour
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/2 cup sugar
  • 1 egg
  • 2/3 cup milk
  • 1/2 tsp vanilla extract
  • 1 cup frozen or fresh fruit - blueberries, blackberries, raspberries, apples, peaches all recommended
  • 2 Tbsp flour - only if using to flour berries

For the creamy goodness:

  • 1 package cream cheese, room temperature
  • 1 lemon
  • 1/2 cup sugar

For the Streusel:

  • 4 Tbsp flour
  • 4 Tbsp butter
  • 10 Tbsp sugar

Preparation:

To make the cake, cream the butter and sugar in a large bowl until soft and smooth. Beat in egg, milk, and vanilla. Mix dry ingredients together and add to wet ingredients. Stir mixture until smooth. Set aside. To make the creamy goodness, mix the cream cheese, zest of lemon, the juice of half the lemon, and the sugar in a bowl until smooth. To make streusel, mix all ingredients together and set aside. To assemble the coffee cake, pour half the batter into a greased pan. Add fruit and dollops of the creamy goodness. Pour in the remaining batter and cover with streusel. Bake in a 375 degree oven for 20-25 minutes. Cook time varies depending on water content of your fruit.
