Green Chili (Lazy Mode)
Ingredients:
- ~1/2 pound pork shoulder
- ~1/2 pound beef chuck
- 1 large yellow onion
- 3-4 cloves garlic
- 2 jars of 505 green chili sauce of desired spice level
- oil
Cut the meat into approximately 1/2 inch cubes and dry it on paper towels. In a semi hot braising pan (ideally enameled cast iron) add approximately 1/8 inch of oil to the bottom of the pan heat the oil until just below its smoke point. Brown the meat in the oil being careful not to crowd the meat, it may take 2-3 batches to brown all the meat. When the meat is brown carefully remove it with a slotted spoon.
Pour out excess oil from the pan. Add the onion and slowly brown over medium low heat. When the onion is close to done chop and add the garlic and cook for a few more minutes. Return the meat to the pan and add the green chili sauce and 1/2 to 1 cup of water. Bring to a boil. Once boiling lower the heat and cover. Cook for 2-3 hours until the meat is tender.
