Green (Cilantro) Chutney

Makes ~2 cups

  • 1 bunch cilantro
  • 3 chopped chilis (jalapeno, serrano, whatever is available)
  • 3 Tbsp lemon juice (or lime)
  • 1/2 inch chunk ginger, chopped
  • 1 1/2 tsp salt
  • 1 tsp cumin seed (1/2 tsp ground)
  • 1 tsp oil
  • 1 tsp sugar

Blend non cilantro ingredients to form a paste. Add cilantro a little at a time, blend till smooth. Add water as needed and adjust to proper consistency/taste.
