Grilled Chicken with Mandarin Oranges and Goat Cheese

  • 2 Chicken breasts
  • 1 tsp each of dry oregano, thyme, salt, pepper, onion powder, and garlic powder
  • 1 Tbsp olive oil for chicken
  • 1 head romaine and one bag of mixed greens or herb salad
  • 1 small can mandarin oranges
  • 4 oz of sliced almonds
  • 1 bunch parsely
  • 1 carrot, sliced thin
  • 4 crimini mushrooms
  • 1 package of goat cheese
  • 3 green onions
  • salt and pepper

Mix dry herbs together. Clean chicken and remove any tendons or excess fat. Coat chicken in olive oil and pat with herb mixture. Grill, bake, or saute chicken until done but not dry, about 12 to 20 minutes depending on thickness. Wash and dry romaine and mixed greens. Tear up romaine and mix with the greens. Top the greens with oranges, almonds, chopped parsley, mushrooms, onions and goat cheese. Finish with chicken. Serve with bread and your favorite dressing.
