Lox and Lemon Salad

Salad:

  • 1, 4oz package of lox
  • 1 large lemon, sliced paper thin
  • 1 head green leaf lettuce
  • 1 head red leaf lettuce
  • 1 medium red onion
  • 2 Tbsp capers
  • 1 cucumber, sliced thin

Dressing:

  • 2/3 cup olive oil
  • 1/3 cup cider vinegar
  • 2 Tbsp dry or fresh dill
  • salt to taste

Preparation:

Place lettuce in a nice bowl and top with remaining ingredients. Set aside and make dressing. Put vinegar, salt, and dill into a bowl or blender and drizzle in oil. Serve with bread or toast for extra points.
