Lox and Lemon Salad
Salad:
- 1, 4oz package of lox
- 1 large lemon, sliced paper thin
- 1 head green leaf lettuce
- 1 head red leaf lettuce
- 1 medium red onion
- 2 Tbsp capers
- 1 cucumber, sliced thin
Dressing:
- 2/3 cup olive oil
- 1/3 cup cider vinegar
- 2 Tbsp dry or fresh dill
- salt to taste
Preparation:
Place lettuce in a nice bowl and top with remaining ingredients. Set aside and make dressing. Put vinegar, salt, and dill into a bowl or blender and drizzle in oil. Serve with bread or toast for extra points.
