Mam Papaul's Chicken and Sausage Gumbo

  • 2 packages Mam & Papaul’s Gumbo Roux Mix (without okra) - You can use other mixes. This is my favorite, but is harder to find.
  • Chopped Onion
  • Chopped Celery
  • Chicken from Costco Rotisserie Chicken
  • 2 lbs. Hillshire Beef Sausage cut into pieces
  • 8 cups chicken broth (this is half of instructions)

Saute onion & celery in olive oil. Add sausage and cook until warm. Add chicken.

In separate container, whisk roux mix with chicken broth. Add to chicken & sausage.

Bring to a boil. This will thicken roux. Next cook for ~45 minutes on low.

Serve on steamed rice.

(I did 1 package, with 1.6lbs of chicken breast, 1 lb of hillshire sausage, 4 cups of broth – worked well)
