Melanzanne

Main Dish:

  • 2 Large eggplants
  • 4 oz. goat cheese
  • 1 package sun dried tomatoes
  • 1 jar basic marinara
  • 1/4 lb fresh basil

Mixed Herb Salad for Garnish:

  • 1/4 cup olive oil
  • 1 Tbsp fresh oregano
  • 1 Tbsp fresh basil
  • 1 Tbsp fresh thyme
  • salt and pepper

Slice eggplant lengthwise and cut in 1/4 inch strips. Coat liberally with oil and herb mixture. Grill or bake at 350 degrees until nice and soft. Let cool.

Lay out one strip of eggplant and add a bit of the goat cheese, basil and sun dried tomato across the bottom end of the eggplant. Roll everything up in a nice little package and set aside. Once all constructed, cover with a nice marinara and bake until warmed through. Serve on a bed of marinara with the mixed herb salad as a garnish.
