Orange Scented Flan

  • 1 cup sugar
  • 3 Tbsp water
  • 1 orange zested
  • 1 cup milk
  • 1 cup heavy whipping cream
  • 1 vanilla bean, split and scraped
  • 4 eggs, beaten

Lightly caramelize sugar in the water. Once this mixture reaches a light amber color, add milk, cream, orange zest, and vanilla. Simmer for 5 minutes. Slowly temper the hot liquid into the eggs and cool. Make a bit more caramel by adding 1/2 cup sugar to 2 Tbsp water and simmer until desired color is reached. Pour this caramel into the bottom of oven safe bowls or aluminum cups. Fill the baking dishes almost full of the cream mixture and bake in a hot water bath at 350 degrees until the custard sets firm. This time varies, about 25-30 minutes depending on the size of your dishes. Remove from water bath and cool. Once cool, either turn out onto a plate or just dig in.
