Pancakes
- 1 1/2 cup sifted flour
- 1 tsp salt
- 3 Tbsp sugar
- 1 3/4 tsp double acting baking powder
- 2 eggs slightly beaten
- 3 Tbsp melted butter
- 1 1/2 - 1 2/3 cup milk
Recommended additions:
- 1-2 bananas
- 2 cups frozen blueberries
Start by sifting all dry goods together into a bowl. Quickly mix in wet ingredients, but do not over-mix. You want to have lumps in the batter. I know, it doesn't seem right, but pelase trust us. Heat a frying pan with lots of butter in it over medium high heat. You will know it is ready to go when a drop of water sizzles violently in the pan. Using a ladle, pour the batter into the pan leaving enough space between the cakes to flip. Immediately add whatever you want in the pancakes. Cook until bubbles form craters over the entire surface of the cake. Flip the cakes and add more butter to the pan, yes more butter. Cook until golden brown. Hold pancakes in the microwave or oven until all batter and fillings are gone. Enjoy with syrup, and of course some more butter.
