Potato's Potato Salad

Makes ~6 cups

  • 2 Russet potatoes
  • 1 Carrot, Small dice
  • 1/2 Cucumber, Quartered, de-seeded, sliced thin
  • Vinegar
  • Mayonnaise
  • A nice stone ground or whole grain mustard
  • Soy Sauce
  • Salt
  • Pepper
  • Cayenne Pepper

Fill a large pot with water, and add a bit of vinegar. Place the quartered potatoes in the pot and bring to a boil. Cook potatoes on high until done. Cut carrot and cucumber while waiting for the potatoes. Mash the potatoes in a large bowl with the carrot and cucumber. Add 2 ish solid scoops of mayo and a good amount of mustard. Salt with half soy and half regular salt so it doesn’t take on too strong of a soy flavor. Add half pepper and half cayenne for a little kick.
