Wolfgang Puck's Pizza Dough
Makes four pizza/calzones worth.
- 1 Package yeast
- 1 tsp honey
- 1 cup warm water (~105F)
- 3 cups AP flour
- 1 tsp salt
- 1 tbsp extra virgin olive oil
In a large bowl add the yeast, honey, and 1/4 cup of the warm water. Stir, let dissolve 10 mins. Add salt, olive oil, 3/4 cup equally warm water, and one cup of flour. Stir till it comes to a batter. Add another cup of flour, stir till it becomes a wet dough. Add another <1/2 cup flour and stir until it becomes annoying to stir.
Turn out onto a floured board (or counter) with 1/4 cup flour. Knead five minutes, incorporating flour as needed until it becomes smooth and springy. In a new bowl (or the old one cleaned out), add a little olive oil and roll the dough to coat. Cover with a damp kitchen towel and place in a warm place such as a partially warmed oven for 30-40 minutes.
Portion into four equal pieces and roll them under themselves until they become small rounds. Place on a sheet pan, re-cover with the damp towel and place in a warm place for another 20-30 minutes.
Dough is ready to use! Refrigerate for up to 3-4 days, or freeze for up to a couple months.
