Yummy, Delicious Halibut

  • 1 8oz fillet of fresh halibut
  • 1 large lemon
  • 1 bunch fresh thyme
  • 4 Tbsp butter
  • 3 Tbsp fresh parsley
  • 1 carrot, peeled and cut into matchsticks
  • 1/2 cup white wine
  • 1 Tbsp shallots
  • 1 tsp minced garlic
  • salt and pepper

Place the halibut fillet on a sheet of aluminum foil that is big enough to make a package around the fish. Lightly season the fish with salt and pepper. Cut the lemon into thin circle shaped slices and lay across the top of the fish. Add the remaining ingredients, seal the aluminum package, and grill or bake 12-15 minutes. Careful when unwrapping, steam is angry. Serve with roasted finger potatoes and steamed vegetables.
