Zukapin's Chicken Chili
Chili:
- 1-2 lbs chicken, boneless
- 2 cartons (8 cups) chicken broth
- 2-3 cans beans - kidney, white, pinto, use whatever you have
- 2-4 cloves garlic
- 1 onion, chopped
- 1 bell pepper, chopped
- Other peppers for flavor - Jalapeno, poblano, habanero
- Vegetable oil for browning onions/chicken
Seasoning:
- Chili seasoning packet for 8 cups of liquid
OR
- Chili powder
- Cumin
- Cayenne
- Salt
- Basil
- Coriander
- Oregano
Add oil to large pot, saute onions and peppers until onions start turning transluscent. Add chicken and brown. Add all remaining ingredients including seasoning and bring to a boil. Reduce to a low simmer and let cook 30+ minutes, stirring occasionally.
Serve in a bowl topped with cheese, sour cream, or desired topping.
